INGREDIENTS:For the Salsa
- 1 Large Mango (ripe)
- 1 Large Tomato, seeded and chopped
- 1/2 cup Red Onion (chopped)
- 1/2 cup Fresh Cilantro (minced)
- 1 small Jalapeno pepper (seeded and finely chopped - please wear gloves to do this)
- 2 T Lime Juice
- Oil (olive oil or other from brushing)
- 20 large Shrimp, peeled and deveined
- Skewers soaked in water for 20/30 minutes
DIRECTIONS:
- Light up your EZ Grill
- Make the salsa first. Peel, pit and finely dice the ripe mango.
- Add the next 5 ingredients to the salsa and refrigerate.
- Place 2 or 3 Shrimp on water soaked skewers.
- Brush shrimp lightly with oil.
- Grill on the EZ Grill until shrimp turns pink and is cooked through (about 2/3 minutes each side)
- Serve with the chilled Mango Salsa.
