INGREDIENTS:2 cups cooked quinoa
1/2 cup chopped celery
1/4 cup chopped green onion
1/4 cup diced carrots
grated parmesean cheese
Salt & pepper to taste
DIRECTIONS:
- Clean the portis and set aside.
- Mix quinoa, celery, carrot & onions together.
- Salt & pepper to taste.
- Place the porties in large piece of foil, upside down so you can stuff them. You can add a little olive oil to the foil to keep the portis from sticking.
- Spoon the quinoa mixture into the mushroom. Drizzle a little olive oil on top.
- Fold the foil over to make an enclosed pouch and place on the grill, semi indirect.
- Let cook for 15 -20 min until the porti is done.
- Open the foil to expose the portis and sprinkle with the cheese. Carefully close the foil and let cook for 5 more minutes until the cheese melts.
If you prefer the onions, celery & carrot more cooked, you can saute them before adding it to the quinoa. I like the crunch of them.
